Cider Appreciation Class

During the course of three hours, "students" will sample 20+ ciders alongside Nat himself, all the while discussing the history of cider, regional differences in cidermaking techniques, and the developing cider culture in the US. The ciders we will drink will include traditional English Westcountry, French style from Normandy, Spanish Basque and Austrian, and the emerging American style. Nearly everything we drink will be apple-only; there is just that much variety!

Cost is $45 and is limited to 32. Please arrive at 7pm well fed as food will not be served. Advance registration required, seating is limited! Email carolyn@revnats.com or call 503-567-2221 to reserve your space.

The Taproom will close early for this event (though we will still be open for bottle sales).

Portland International Cider Competition

The NWCA is pleased to invite you to participate in the Portland International Cider Competition 2016 -- The Campaign for the Cup! With its acquisition of the event created in 2013, the NWCA is also excited to announce that there will be a public awards ceremony with much pomp and circumstance (and press!) in July (date TBD) to announce the winners, who will remain secret until the awards party. The NWCA will purchase cider from the winning cideries to serve at this ticketed event.

To encourage cidermakers who have never before entered the PICC, the NWCA is offering one free entry and buy one get one free registrations to members who are entering for the first time (for up to 4 free entries). Contact Carolyn Winkler at the email below to use this discount. As always, current NWCA members have a discounted rate of $50/entry. Use the discount code PICC2016 when entering; non-members pay $75/entry.

he PICC cup -- who will take it home this year? From the 2013's Cyser by Merridale, to just-then-starting-up Apple Bandit Original in 2014, to 2015's Perry from Left Field up in Canada, the Best in Show is a coveted and elusive prize. The winner will have their name engraved on the plinth of the cup, and be given the cup to display proudly in their cidery until the 2017 competition. Gold, silver and bronze medals will be awarded to the top three scoring ciders in each category. In the extremely unlikely event that all the entries in a particular category scored very low, the category judges may decide to award no medals, or a combination of specific medals. Awards will also be given to both Large and Small Cideries of the Year.

While the bragging rights are worthwhile, professional level judging is what truly sets this competition apart. Judges will include experienced Beer Judge Certification Program (BJCP) judges, experienced non-BJCP judges, industry professionals and other commercial cidermakers from across the entry area. Entrant cidermakers are encouraged to participate in the judging and the organizers will ensure that no cidermakers judge a category in which they have an entry. Judges will be provided with breakfast and lunch. All judging will be conducted using “blind” panels. Each entry will be identified by a registration number and judges will only see that number along with important information needed to properly evaluate the entry, such as category entered, level of carbonation, level of sweetness, alcohol level and any special ingredients or entrant notes.

The competition will be held on Sunday, June 19, 2016 (Happy Father's Day!) at Reverend Nat's Hard Cider (who will not be entering any ciders in the competition). Registration is open now and closes on Sunday, June 12, 2016. Entries must be received at the ship-to/drop-off location no later than 8pm on Friday, June 17, 2016. Entrants are encouraged to readstyle information early to familiarize themselves with entry categories.

This non-BJCP competition is for commercial producers only (holding applicable licenses to produce cider). Only ciders are allowed entry in the competition and the categories have been developed expressly for this competition and reflect the true nature of the commercial cider market as it exists. For detailed information about the style guidelines and categories please visit the entry information page.

Additionally, this competition is for ciders produced in the Pacific Northwest, within the geographic bounds deliniated by theNorthwest Cider Association. Cideries who are already members of the NWCA may enter ciders made within the bounds of theNWCA membership area and will receive a discount on their entry fee. Commercial cideries not yet members of the NWCA but eligible to join the NWCA (including those located in British Columbia, Canada) may enter the competition and enter ciders made within the bounds of the NWCA membership area but will not receive a discount on their entry fee.

Back in January, Reverend Nat's friends at Raven & Rose offered him a couple of freshly-dumped bourbon barrels.  Nat is never one to say no to a good used barrel of any kind, but these two were of a special provenance. R&R has a habit of buying entire barrels of bourbon from various Kentucky distillers then using that single-barrel whiskey in their award-winning Old Fashioned cocktails. Yes, the barrels they were offered were two of these self-same barrels and they are Eagle Rare 10 Year Bourbon. So naturally, Reverend Nat aged his flagship cider Revival Hard Apple in one and my spring seasonal Sacrilege Sour Cherry in the other. Aging for four months in these barrels created a taste treat unlike anything I’ve ever had. The Revival will be served alongside a neat glass of the original Eagle Rare bourbon as aboilermaker while the Sacrilege will be served as a Stone Fence cocktail with some bitters and a shot of the same Eagle Rare, maybe even a cherry. Fans of bourbon & cider must not miss this incredible event. 21+ only in the Rookery Bar at Raven & Rose, no advance purchase required.

Draft Selections
Finnriver Barrel Berry Sour Cider, 6.5% abv
A very limited release, Finnriver Berry Barrel Sour Cider is part of Finnriver’s Crew Selection line. This cider is stupendously raspberry, tart, truly tangy with strong fruit acids from apples, pears and berries. Lively burst of fruit and vivid fermented flavor. Fermented and soured with a light oak backbone that provides balancing of depth and bitterness. A combination of pear and apple wines fermented in barrels and in steel tanks, soured with Brettanomyces yeast, Lacto-bacillus and Pediococcus bacteria and are then combined. Once blended, Finnriver applied a famous finishing technique from the Belgian beer world called Lambic-- 25 pounds of fresh, organic raspberries were added to a blended tank of soured cider and where the resident yeast/bacteria were allowed to work on the ripe berries, to create a cider lambic.

Finnriver Oak and Apple, 6.5% abv
Part of Finnriver’s rotating Crew Selections line the limited release, Oak and Apple Cider is a medium bodied and lightly oaked. This semi-sweet cider begins with a clean, sparkling Granny Smith foundation and is finished with a woody vanilla nose. A light, elegant showcase of French and American Oak our cider is aged in Pommeau barrels, adding juicy bittersweet tannin complimenting the oak. Finnriver’s crew selections line of ciders are produced small batch in 375ml bottles and limited draft, highlighting the creative talents of Finnriver’s farm fermenting crew.

Finnriver Lavender Black Currant Cider, 6.5% abv
Part of Finnriver’s Seasonal Craft Cider line, Lavender Black Currant marries bright apple fruit, berry complexity and rich, floral depth of local, organic lavender. This semi-sweet botanically infused cider is crafted from organic Washington dessert apples, featuring seasonal varieties such as Granny Smith, Pink Lady, Braeburn and Gala. Our botanical ciders share the earthly essence of life in the fields and forests of the Olympic Peninsula. Join WildCraft Cider Works at The Tap and Growler for an #orciderweek Oregon Botanical Takeover! We will have the following 4 ciders on tap made with Oregon Botanicals.

Lilac Fermented Semi-sweet Cider. A light and floral semi-sweet Lilac Cider made with fermented Lilac blossoms. Very small Batch.

Toasted Licorice Fern Root infused Cider. An earthy complex blend of wild fermented Gala apples with an infusion of toasted Licorice Fern roots. Soft Profile with a lasting Licorice finish. Very small Batch.

Spruce Tip Cider. Oregon Wild Harvested Spruce tip infused off-dry Cider with strawberry and spruce aromatics. Very small Batch.

Wild Rose . The first week of a Wildcraft flagship release. A very floral and clean wild fermented rose cider using wild harvested Sweet Briar Roses. Lightly sweet with Apple and Rose aromatics.

We will have give away's including a 4 bottle basket including a limited bottle of each Oregon Botanical Cider.

Last fall, Rev Nat's collected 10 distinct apple varieties, fermented them all with the same yeast and backsweetened each just a touch. Every variable that could be controlled, was. Now you get to taste a massive flight of single-variety heirloom ciders, each a member of the Revelation series. My gold medal winning Revelation Newtown Pippin will of course be on hand to focus your palate. This event is at Reverend Nat's Taproom and is, like always, 21+ only. No advance purchase is required, just come on down.
