Join Scott Labs and Yonder Cider for a virtual workshop on increasing quality when working with culinary apples, concentrate, and less interesting bases than cider apples. Cider makers often find that they want to scale production and need to use culinary apple juice to do that economically, but don’t want to lose the nuance and quality that comes from using cider apples. Scott Labs is collaborating with Yonder Cider to discuss how to make culinary apple juice fall more in line with a cider apple profile in terms of flavor, aroma, and texture using a variety of tannins, mannoproteins and other fermentation products.
